Ingredients
    •    1 lb bag of raw jumbo shrimp, peeled and deveined
    •    2 tbsp Very Necessary Island Spiced Oil
    •    1 tbsp Very Necessary Jerk Seasonings
    •    1 tsp old bay 
    •    1/2 tsp black pepper
    •    1/2 tsp creole seasoning
    •    1 small onion, finely chopped
    •    3 cloves garlic, minced & 1/2" fresh ginger 
    •    1/2 Scotch bonnet pepper, finely chopped (optional, for extra heat)
    •    1 tsp fresh thyme (or ½ tsp dried)
    •    1 tsp onion powder
    •    1/2 can(7oz) coconut milk
    •    1 tbsp curry powder
    •    1/2 tsp all-purpose seasoning
    •    6 all spice berries (if you have your island spiced oil, it's already in it)
    •    1 tsp garlic powder    •    1/4 cup water or seafood broth
    •    2 scallions, chopped white and some of the green parts, some(for garnish)

 

Instructions

1. Wash & Season the Shrimp

In a bowl, toss the shrimp with Very Necessary Jerk Seasonings Rub, Creole Seasoning, black pepper, onion powder, garlic powder, 1 tbsp Spiced Oil pieces, and Old Bay. Let it marinate for at least 10 minutes to absorb the flavors.

2. Sauté the Aromatics

Heat 1 tbsp Very Necessary Island Spiced Oil in a large skillet over medium heat. Add the chopped onions, garlic, ginger, scallion, and Scotch bonnet pepper. Sauté for about 2 minutes until fragrant.

3. Build the Curry Base

Stir in the curry powder. Let it toast in the oil for 30 seconds to bring out the deep, earthy flavors. Add seasoned shrimp and stir thoroughly to incorporate flavors.

4. Simmer in Coconut Milk

Pour in the coconut milk and water or seafood broth. Stir well and add thyme, letting it simmer for about 5 -10 minutes on high until the sauce thickens slightly and the shrimp is cooked.

5. Garnish and Serve

Top with chopped scallions for an extra burst of freshness. Serve hot with steamed rice, jasmine rice, or even boiled dumplings for a true Caribbean experience.
