Ingredients
For the Wings:
• 2 lbs chicken wings (drumettes & flats)
• (You don't need these if you get the Asian Chrispy fry powdered mix; Just use a quarter cup(1/4) of it). Otherwise- 1 tbsp baking powder & Corn Starch (for extra crispiness). However, I do recommend this Chien Gion Chrispy Fried Powder Mix.
• 1 Egg Yolk
• 1 tsp Maggi season-up jerk is what I used (use any jerk seasoning you have)
• 1 tsp McCormick Like Sweet, Like Smoky by Tabitha Brown
• 1 tsp garlic powder, 1 tsp Onion Powder
• 1 tsp Cayenne Pepper, 1 tsp creole seasoning I use Tony Chacheres
• 2 tbsp Very Necessary Island Spiced Oil (the pieces)
For the Maple Orange Lemon Pepper Glaze:
• ¼ cup pure maple syrup
• Zest and juice of 1 orange or (I used an orange pepper Celtic salt that I made) Check out the video on my TikTok @deeopt6 (The name of the video is Orange Pepper Celtic Salt).
• Zest and juice of 1 lemon
• 1 tbsp black pepper
• 2 tsp of and habanero or ghost pepper hot sauce (optional, for extra heat)

Instructions
1. Prep & Season the Wings
1. Pat the wings dry with a paper towel.
2. Cook the Wings
In a large bowl, toss the wings with all the seasonings including Very Necessary Island Spiced Oil for best results marinate overnight. When you get ready to cook add egg yolk and rub in then add the crispy fried mix or baking powder & corn starch. Rub in until all the white disappears and you end up with a pasty coating over all the wings. See the video for reference👇🏽if you are unsure how it should look.
Oven Method:
1. Preheat the oven to 425°F (220°C).
2. Line a baking sheet with parchment paper and place a wire rack on top.
3. Arrange wings in a single layer and bake for 40-45 minutes, flipping halfway through, until golden brown and crispy.
Air Fryer Method:
1. Preheat the air fryer to 380°F (195°C).
2. Arrange wings in a single layer (cook in batches if needed).
3. Air fry for 20-25 minutes, shaking the basket halfway through.
Stovetop Fry:
- Pot on the stove, add your favorite frying oil
- Add aromatics for extra flavor (garlic, scallion, onion, ginger) you can add pieces of 1 or all (Optional)
- Allow the oil to become hot then add wings (don't crowd pot)
- Fry on one side for 5-7 mins then flip and fry on the other side for the same time or until golden brown and done.
- Remember, the frying time may differ depending on the size of the wings.
3. Make the Glaze
1. In a small saucepan over medium heat, combine maple syrup, orange juice, orange zest, lemon juice, lemon zest, and black pepper.
2. Simmer for 3-5 minutes, stirring occasionally until the glaze thickens slightly.
3. Remove from heat and stir in butter (if using) for a silky finish. Butter is optional
Add done chicken wings to a bowl and pour the glaze over them.
4. Toss & Serve
1. Once the wings are cooked, toss them in the maple orange lemon pepper glaze.
2. Garnish with extra lemon zest or fresh herbs (like parsley or cilantro) for a fresh touch.
3. Serve immediately no dipping sauce needed!
