This is the original Jamaican Christmas cake, sometimes called black cake, fruit cake, rum cake, and maybe other names. It is a delicacy mostly eaten from Christmas to the New Year or (October to January). However, it can be eaten at any time of the year.
The cake is a mixture of sugar, butter, molasses, spices, essence, eggs, browning, flour, baking powder, salt, etc., and, most importantly, fruits and raisins soaked in Jamaican red-label wine and white rum for over a year. This combination whips up a flavorful, not-so-heavy, creamy-tasting black cake that melts in your mouth and leaves you wanting another slice.

(Gift Pans Color and Patterns Vary.) This year we tried duck egg in some of our cake recipes, however, you can have it with regular chicken eggs. Duck eggs are nutritious and great for baking, it doesn't alter the authentic Jamaican taste of the cake. However, if you do not care for duck eggs you SELECT REGULAR CHICKEN EGG OPTION.
