Ingredients You’ll Need


    •    2-3 ripe bananas (depending on size), mashed
    •    ½ cup (1 stick) unsalted butter, melted
    •    ¾ cup brown sugar (or granulated sugar)
    •    2 eggs, beaten, 2 tbsp Avocado/Extra Virgin Olive oil
    •    1 teaspoon vanilla extract, 1/4 tsp vanilla bean paste
    •    1 ½ cups all-purpose flour
    •    1 teaspoon baking soda, ½ teaspoon baking powder
    •    ½ teaspoon salt, 1 tsp nutmeg
    •    ½ teaspoon cinnamon, pinch of ground all spice, pinch of ground cloves 
    •    ½ cup chopped walnuts, crasins, or chocolate chips Instructions(optional) I used crasin in my recipe.

1. Prep Your Oven and Pan

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

2. Mash and Mix

In a large mixing bowl, mash the ripe bananas until smooth. Stir in salt, the melted butter, sugar, eggs, avocado oil, and vanilla extract.

3. Add the Dry Ingredients

Sprinkle in the flour, baking soda, baking powder, cloves, all spice, nutmeg, and cinnamon. Gently fold everything together until just combined—don’t overmix! If using nuts, crasins, or chocolate chips, fold them in now.

4. Bake to Perfection

Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Melt an inch of butter with a little juice from your marschino cherries or a little on and brush over it as soon as you remove it from the oven. This helps moisten the top and edges that were exposed to the heat and gives a beautiful sheen.

5. Cool and Enjoy

Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack. Slice, serve, and enjoy with a cup of tea, coffee, or my favorite Milk.
