Also, check out our Escovitch sauce, a Jamaican favorite usually eaten over fried fish. However, you can add it to your burgers, hotdogs, fried shrimp, jerk or fried pork, etc., endless possibilities.
Escovitch is a pickled sauce made with vinegar, onion, garlic, all-spice berries, scotch bonnet peppers, and carrots as the original recipe (which is what we have created). However, some people may add bell peppers and other vegetables to personalize.
Please Note: Garlic in Escovitch sauce may oxidize and becomes a blue-green color, especially in cold temperature. This is caused by a reaction between enzymes and sulfur-containing amino acids in the garlic (the same enzymes are responsible for garlic’s flavor). When these enzymes are activated by mild acid, they produce blue and green pigments. The compound responsible for this reaction, isoalliin, is formed when garlic is stored at a cool temperature for several weeks, typically in the winter, when pantries are colder. This Escovitch sauce does not need to be stored in the fridge, it can sit out as long as ever and will not go bad.
